The paprika-cured Manchego cheese is handmade from raw sheep's milk. It is ripened during 6 months in a natural and controlled way in the cellar. In the last phase of refining, it is covered with paprika on the crust to enhance its intense flavour and aroma and its attractive colour. Awards: *Bronze World Cheese Awards 2019-20
