The artisan cured Manchego cheese is made in the traditional way with fresh sheep's milk. It is matured for 6 months in the cellar until it reaches a firm texture with an ivory colour. The slow and, at the same time, deep process of refining with natural mouldy crust allows it to achieve an intense and balanced taste in the mouth.
