Rosemary cured Manchego cheese is made in a traditional way from fresh sheep's milk. During six months the cheese matures in a natural and controlled way in the cellar, reaching a firm texture, compact ivory color and pleasant and intense flavor in the mouth. The last two months, the cheese is refined with rosemary leaves on the crust to give it a Mediterranean floral aroma, which makes it an outstanding cheese. Raw sheep's milk, butter, rosemary, rennet, lactic ferments, salt and egg lysozyme.
